WHAT IS SAFFRON?

Saffron is one of the most valuable old world spices. It is actually the dried stigmas of Crocus sativus Linnaeus, and more than 170,000 flowers yield just one kilogram of this precious condiment. No wonder it is also called "vegetable gold". The stigmas are separated from the freshly picked flowers by hand and then dried.
